Despite generally high levels of fat content in pelagic fish, bacteria is not as problematic as in, for example, salmon processing. This is due to the fact that pelagic are often used in cooked, marinated or hot-smoked dishes. A great challenge for pelagic processors is to process big amounts of product in a limited time. In order to do this, time optimisation both during the processing and sanitation is vital. However, microbiological contamination can happen if cleaning and disinfection are not conducted properly. Besides putting consumers at risk, the source of the bacterial infection on the premises can take a long time to identify and neutralise. Product recalls can lead to tremendous financial and reputational damage, lower selling prices and loss of clients.

Every processing area is different, but it can be estimated that manual disinfection of 3000m2 requires 2.5 hours and 2-3 workers. ALVAR automates the disinfection process, with consequent savings in labour costs. Automation also reduces the exposure to human errors and to labour shortages

When it comes to processing pelagic fish, time optimisation is essential.
In some cases, our clients in the pelagic industry process fish 24 hours a day, every day of the week. In this scenario, automating the disinfection process shortens the sanitation time, allowing to get back to production quicker than usual. ALVAR can disinfect 6000m2 in 20-30 minutes.
