In general terms, white fish is not as vulnerable to bacteria as pelagic fish or salmon. However, infections might happen if cleaning and disinfection are not conducted properly. Besides putting consumers at risk, the source of the bacterial infection on the premises can take a long time to identify and neutralise. Product recalls can lead to tremendous financial and reputational damage, lower selling prices and loss of clients. Additional challenges in white fish processing are the lack of available workforce in some geographical areas and the aim of improving the sustainability of their operations

AUTOMATING THE
DISINFECTION
PROCESS

Every processing area is different, but it can be estimated that manual disinfection of 3000m2 requires 2.5 hours and 2-3 workers. ALVAR automates the disinfection process, with consequent savings in labour costs. Automation also reduces the exposure to human errors and to labour shortages

IMPROVED
SUSTAINABILITY

Misting is an optimised method of using water and disinfectant chemicals. Our systems are custom-made, but, on average, we reduce the consumption of water by 90% and of chemicals by 70% during the disinfection process

TRAWLERS

Dozens of ALVAR systems have been installed in trawlers in the Northern Atlantic. ALVAR automates the disinfection process and shortens sanitation times. Due to this, the crew members are released from the task of manually disinfecting the processing area, being able to dedicate the time to other duties or resting. Depending on the chemical chosen, the mist disinfection can even lead to quicker and easier cleaning of the machinery by reducing stickiness on surfaces. Savings in manual sanitation time tend to increase the happiness of the crew. Additionally, ALVAR savings in fresh water in the disinfection step can be relevant due to the limited availability of freshwater onboard
